Mr. Ajit K. Singh is an Assistant Professor of Food Process Engineering with an appointment in Department of Agricultural & Food Engineering at NIMS University, Jaipur. He received a B.Tech. in Agricultural Engineering from the Allahabad Agricultural Institute, Allahabad; and an M.Tech. in Dairy & Food Process Engineering from the Indian Institute of Technology, Kharagpur. Before joining NIMS University, Jaipur in 2011, he was a Teaching Assistant from July, 2010 to April, 2011 and involved in his project “Development of Functional Food”.
Mr. Ajit K. Singh research integrates development of flaxseed based functional food as well as characterization of Physicio-Chemical characteristics of flaxseed powder. He integrated his research area in the field of Food Supply Chain Management after doing a certificate program in AgriBusiness Management from Indian Institute of Crop Processing Technology, Thanjavur (Ministry of Food Processing, India). He is presently working on a book “Food Supply Chain Management: Concept & Application”.
